The Maxim Chenin Blanc 2022. 

The Chenin Blanc was picked on the 24^th March. This allowed the fruit some extra hang time to further develop the flavours. It was pressed to tank and barrels, with the tank being inoculated with commercial yeast. The barrels were then left for a wild fermentation, which creates unique aromatic characters from the wild ferment and more fruit driven flavors with the inoculated portion.

The wine finished with residual sugar to help with balance. Again I Lees stirred both oak barrels and tank for 6 months to add richness. I want to create a wine that has aromatic appeal with fine texture and length, that will match with a wide range of foods.
