WINEMAKING

The Woodstock Vineyard isa cooler, later-ripening sitethat allows grapes to developmaximum aroma and flavour while preserving natural acidity. The fruit was harvested when thebalance between ripeness andfreshness was deemed optimal. Winemaking was stronglyfocused on enhancing theperfumed/spicy aromaticsand delivering the balance andtexture so crucial to quality Pinot Gris. The fruit was given someskin contact before being gently pressed and the juice barrel fermented in old 500-litre French oak puncheons. A small amount of residual sugar was retained to balance the acidity and the wine bottled early to capture its youthfulness and vitality.

THE WINE

Ripe Nashi pears are complemented by exotic aromas of sweet spices (think cinnamon, cloves, nutmeg), rose water and spicy glacè ginger. The wine is rich and opulent in the mouth with a soft, mouthcoating texture balanced by refreshing acidity. Excellent persistence of flavour, and a lingering spicy finish, ensure the wine is satisfying either on its own, or partnered with a wide range of foods, particularly

Asian-inspired dishes.
