Barrel Fermented Sauvignon Blanc

Sauvignon Blanc can be so distinctive and boisterous by nature. Barrel fermentation and time takes that exuberance and adds layers of complexity that allow for a more restrained style of wine that matures well with age and accompanies food so well. Add wild fermentation and full malo-lactic fermentation and you then have a wine you can talk about over dinner.

 Bright and complex with the first scents being soft baking spice and barrel suggestions, then a mix of roasted stone fruits, citrus and light clay mineral qualities. A youthful, taut and refreshing wine touches the palate first, then flavours of citrus, pith and peel, then stone fruit flavours follow next. Plenty of acidity with some fruit and barrel spice combination, fine tannins and balanced, even phenolics. Best drinking from 2025 through 2030+.

 The Making            

Process                   Whole bunch pressed straight to barrel - No added enzymes, SO2 or yeasts

Fermentation          Wild natural fermentation, followed by 100% Malolactic fermentation. SO2 added post Malo.

Barrel work             Lees stirred at the on-set of malolactic fermentation and left to settle

Barrel Aging           9 months in old 600 Demi Muid and seasoned French barriques

Assemblage           After 9 months assembled to stainless steel tank for settling 

Marriage                 Naturally settled for 2 months to allow bottling unfiltered
