Started in the spring of 2017, Novum is the brainchild of William & Rachel Hoare.

Novum has a simple philosophy. They source small parcels of grapes from special sites within established vineyards to make the very best wine they can. Will's experience and wide network of grower contacts in Marlborough puts them in a unique position to make their dream a reality.

Novum Chardonnay, 2017

Very smart nose fully vindicates my enthusiam for New Zealand Chardonnay. If only All white burdundy smelt this clean and compelling. Crystalline fruit. Good, medium weight of pure fruit thats already intense but promises much more in the future. Long and complex. No playing around with reduction.

A complex and very captivating bouquet with scents of sweet oak and baking spices, a core of myriad red berry fruits, heirloom roses, soils and minerals. On the palate - equally complex, layered and captivating with fruit, barrel, floral and mineral flavours that reflect the bouquet. Fine tannins with a chalk dust texture, medium+ acidity and lengthy finish. A delicious wine. Drinkable from today and through 2028+.
