Violiet, Wild herb, blueberry & red currant aromatics on the nose give way to an elegantly textured mouthfeel showing freshness spice and warmth, the finish has poise and persistance.
Winemaking Winemaker: Dean Shaw Fermentation: Cold soak for one week followed by a fermentation over one week with one hand plunge per day.
5% whole bunch press. Barrel: 10 months in French Oak, 24% new French Oak. Vintage note: Stunning!
Food pairings
Lamb, chargrilled steak, wild venison. A cassoulet or duck with olive would suit this vintage. Make a coq au vin and use Pinot Noir in the sauce. Glazed ham. Roast turkey. Pair it with a truffle brie or a light blue cheese.
