Thomas Legacy Cabernet Sauvignon 2013 750ml

Fruit growing: Spring started fine and mild providing ideal conditions for flowering and fruit set albeit a low yielding crop. Summer was consistently warm and very dry and Autumn proved to be unseasonably warm and dry. A superb growing season producing wines with excellent aging potential.

Winemaking: The fruit was hand harvested on the morning of the 12th of April 2013, we were expecting a storm and a lot of rain (80mm) after having had a very long dry summer and autumn. The fruit was perfectly ripe and the stems were well lignified. In the winery, the fruit was destemmed and individual berries were screened to retain only the ripest fruit. The berries were split and then transferred to small open top fermenters where fruit was soaked for 5 days to benefit colour and tannin extract. The must was warmed and a spontaneous fermentation by the native vineyard yeasts took place for a period of 10 days. Post fermentation the young wine rested for 3 weeks “on skins” before being pressed. The wine was matured in new French oak barrels for 18 months then blended on the 8th Janurary 2015 and bottled unfined and unfiltered on the 20th of February 2015.
